Ingredients
Scale
Eggs and Yogurt Mixture
- 2 large eggs
- 1/2 cup plain Greek yogurt (or dairy-free yogurt)
- 1 clove garlic, minced
- Salt and pepper to taste
Spiced Olive Oil Topping
- 1 tablespoon olive oil
- 1/2 teaspoon paprika (or smoked paprika)
- 1/4 teaspoon red pepper flakes (optional)
Garnish and Serving
- Fresh parsley, chopped (for garnish)
- Crusty bread (for serving)
Instructions
- Prepare Garlic Yogurt Sauce: In a small bowl, combine the plain Greek yogurt with the minced garlic, salt, and pepper. Mix well to integrate flavors and set aside for later assembly.
- Poach the Eggs: Bring a pot of water to a gentle simmer. Carefully crack each egg into the water and poach for 3-4 minutes, until the egg whites are set but the yolks remain runny. Use a slotted spoon to remove the eggs and set them aside to drain.
- Make Spiced Olive Oil: In a small pan over medium heat, warm the olive oil. Add the paprika and red pepper flakes if using, and cook for about one minute until fragrant, stirring gently. Remove from heat immediately to prevent burning.
- Assemble the Dish: Spread the garlic yogurt mixture evenly on a serving plate. Gently place the poached eggs on top of the yogurt layer. Drizzle the warm paprika-infused olive oil over the eggs and yogurt.
- Garnish and Serve: Sprinkle chopped fresh parsley over the top for color and freshness. Serve the Turkish Eggs with crusty bread on the side for dipping and scooping the creamy sauce.
Notes
- Use fresh eggs for the best poaching results as they hold their shape better.
- Smoked paprika can be substituted for regular paprika if you prefer a smokier flavor.
- If you don’t have a slotted spoon, use a fine mesh strainer to lift the eggs from the water.
- The red pepper flakes are optional and can be adjusted or omitted based on your preference for heat.
- For a dairy-free version, use plant-based yogurt alternatives that are plain and unsweetened.
