Salad Ingredients:
- 1 (14 oz) can artichoke hearts, drained and quartered
- 1 1/2 cups cherry tomatoes, halved
- 1/4 cup sun-dried tomatoes, sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup Kalamata olives, halved
- 1/4 cup fresh basil leaves, torn
- 2 tablespoons chopped fresh parsley
- 2 tablespoons capers (optional)
Dressing:
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon lemon juice
- 1 garlic clove, minced

Instructions
- In a large mixing bowl, combine the artichoke hearts, cherry tomatoes, sun-dried tomatoes, red onion, olives, basil, parsley, and capers. Mix well.
