- 9 lasagna noodles
- 2 tablespoons butter
- 2 cloves garlic, minced
- ½ cup onion, finely chopped
- ¼ cup all-purpose flour
- 2 cups chicken broth
- 1 cup whole milk
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
Filling:
- 1 ½ cups ricotta cheese
- 1 large egg
- 3 cups cooked chicken breast, shredded
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1 cup fresh spinach (optional)
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Cook the noodles: Cook lasagna noodles according to package directions until al dente, drain, and set aside.
- Make the sauce: Melt butter in a saucepan, sauté garlic and onion, whisk in flour, then slowly add chicken broth, milk, and cream. Season and simmer until thickened.
- Prepare the filling: Mix ricotta cheese and egg in a bowl.
- Assemble the lasagna: Layer sauce, noodles, ricotta mixture, chicken, spinach, and cheeses. Repeat layers and top with remaining noodles, sauce, and cheeses.
- Bake: Cover with foil and bake for 30 minutes, then uncover and bake for an additional 10–15 minutes until golden and bubbly.
- Rest and garnish: Let the lasagna rest for 10 minutes before serving. Garnish with fresh parsley.
