  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • ½ cup onion, finely chopped
  • ¼ cup all-purpose flour
  • 2 cups chicken broth

  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt

Filling:

  • 1 ½ cups ricotta cheese
  • 1 large egg
  • 3 cups cooked chicken breast, shredded
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 cup fresh spinach (optional)
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Cook the noodles: Cook lasagna noodles according to package directions until al dente, drain, and set aside.
  3. Make the sauce: Melt butter in a saucepan, sauté garlic and onion, whisk in flour, then slowly add chicken broth, milk, and cream. Season and simmer until thickened.
  4. Prepare the filling: Mix ricotta cheese and egg in a bowl.
  5. Assemble the lasagna: Layer sauce, noodles, ricotta mixture, chicken, spinach, and cheeses. Repeat layers and top with remaining noodles, sauce, and cheeses.
  6. Bake: Cover with foil and bake for 30 minutes, then uncover and bake for an additional 10–15 minutes until golden and bubbly.
  7. Rest and garnish: Let the lasagna rest for 10 minutes before serving. Garnish with fresh parsley.
