Ingredients
Scale
Protein
- 1 lb ground beef or turkey (or plant-based ground meat)
Veggies
- 1 cup frozen mixed vegetables (peas, carrots, corn)
Dairy & Convenience
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup milk
- 1 cup shredded cheddar cheese
Starch
- 1 bag (32 oz) frozen tater tots
Seasoning
- Salt and pepper to taste
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it is hot and ready for baking the casserole evenly.
- Cook Meat: In a skillet over medium heat, cook the ground beef, turkey, or plant-based ground meat until browned, breaking it apart as it cooks. Drain any excess fat to keep the casserole from being greasy.
- Combine Soup and Veggies: Stir the cream of mushroom soup and milk into the cooked meat until well blended. Then add the frozen mixed vegetables, seasoning the mixture with salt and pepper to taste.
- Assemble Casserole: Spread the meat and vegetable mixture evenly into a greased 9×13-inch baking dish. Arrange the frozen tater tots in a single layer over the top, then sprinkle shredded cheddar cheese evenly over the tater tots.
- Bake: Place the casserole in the preheated oven and bake for 30 to 35 minutes, or until the tater tots are golden brown and crispy, and the cheese is melted and bubbly. Remove from oven and let sit for a few minutes before serving.
Notes
- For a lighter version, use lean ground turkey or plant-based meat.
- Frozen vegetables can be swapped for fresh vegetables if desired; just lightly steam before adding.
- Substitute cream of mushroom soup with a homemade mushroom sauce for a less processed dish.
- Tater tots can be replaced with hash browns but cooking times may vary.
- Add a pinch of paprika or garlic powder for extra flavor.
