Stuffed Avocado

Without a doubt, the stuffed avocado is one of the most consumed entrees in Peru, for those who love to eat avocado and until now they have only tried it in cream (guacamole) or in salads, this recipe is as simple as tasty.

Ingredients
  

  • 3 medium ripe avocados
  • 1/2 skinless chicken breast
  • 1 medium carrots
  • 1 medium beet
  • 1 cup of peas (peas)
  • 3 tablespoons of lemon juice
  • 4 tablespoons mayonnaise
  • Salt and pepper to taste

To decorate:

  • 1 egg
  • 6 black olives without seed

Instructions
 

  • In a saucepan cook the chicken with a little salt, when it is ready drain the water well and fray it in a bowl.
  • In another pot, cook the carrots, beets, peas and the whole egg (in shell). Remove the vegetables as they cook. Chop each into small cubes and add them to the chicken bowl.
  • Once everything is ready, add the lemon juice and the mayonnaise to the bowl, mix well and season with salt and pepper to taste.
  • Now, cut the avocados in half, remove the seed and peel each one. Fill each half with the chicken and vegetable mixture in the hole left by the seed, forming a mountain with the filling, if you like you can cover the entire surface of the avocado.
  • Finally, cut the egg into slices and the olives in half. Decorate each avocado with a piece of egg and a half of olive.

Notes

Ready! We can now enjoy a delicious stuffed avocado. Do not forget to put a little more mayonnaise on the table so that diners serve themselves to their liking. BON APPETITE!
