Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Mix the cookie dough: In a large mixing bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla and grated zucchini. In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Stir in the nuts if using.
- Bake the cookies: Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 10–12 minutes, or until set and lightly golden. Cool completely on wire racks before frosting.
- Make the frosting: For the frosting, beat the cream cheese and butter together until smooth. Add the powdered sugar gradually, then mix in the vanilla until fluffy. Spread frosting generously over cooled cookies.
