Description

Zuppa Toscana is a comforting Italian soup featuring savory Italian sausage, tender kale, diced tomatoes, and a creamy Parmesan-infused broth. Perfect for a hearty meal, this soup delivers rich flavors and satisfying warmth.

Ingredients

Scale

Main Ingredients

  • 2 tablespoons olive oil
  • 1 pound Italian sausage, removed from casing and crumbled
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 32 ounces chicken stock
  • 1 cup chopped kale
  • 1 (15 ounce) can diced tomatoes
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Heat the Olive Oil: In a large pot or Dutch oven, heat the olive oil over medium heat to prepare for cooking the sausage and vegetables.
  2. Cook the Sausage: Add the crumbled Italian sausage to the pot and cook until browned, breaking it apart with a spoon as it cooks to ensure even browning.
  3. Add Onion and Garlic: Stir in the chopped onion and minced garlic, cooking for about 5 minutes until the onion is softened and fragrant.
  4. Combine Ingredients: Pour in the chicken broth and chicken stock, then add the chopped kale and diced tomatoes. Bring the mixture to a boil, then reduce the heat to a simmer. Let cook for 15 minutes or until the kale is tender and flavors meld.
  5. Add Cream and Cheese: Stir in the heavy cream and grated Parmesan cheese. Season the soup with salt and pepper to taste, mixing well to combine all the ingredients.
  6. Serve Hot: Ladle the hot soup into bowls and enjoy immediately while warm and comforting.

Notes

  • For a spicier version, use spicy Italian sausage or add red pepper flakes when cooking the sausage.
  • Fresh kale is preferred, but you can substitute with spinach if needed.
  • If you want a thicker soup, simmer it a bit longer before adding cream and cheese.
  • Parmesan cheese can be substituted with Pecorino Romano for a sharper flavor.
